Waterzooï is a traditional Belgian dish from Flanders dating from the Middle Ages towards the end of the 13th century. This was created in the city of Ghent in Belgium at the Quai du Brabant.
At the time, a water mill was built to regulate the level of the Scheldt by means of a dam. As a result of the construction of this mill, a lot of grain and flour residue fell into the water, which attracted fish. Thus the city of Ghent quickly found itself submerged in freshwater fish.
As a result, the number of fishermen increased drastically in the region. Fish has become an affordable commodity for locals and the basis of several essential dishes in the Flanders region.
The word waterzooï means “boiling water” in Flemish.
